Food Service Director of the Month - Michael Lozano

Michael Lozano

Michael Lozano is the Food Service Director of the Avondale Elementary School District in Arizona. He is a native of El Paso, Texas where he started his career working in the Sun Bowl Stadium of the University of Texas at El Paso.

Mr. Lozano has been working in the food service industry for 30 years and has worked in many aspects of food services, from quick service restaurants to university dining operations. He has worked in school nutrition for the last 11 years, the last 9 have been as a director in various school districts in Arizona.

Mr. Lozano would like to share his favorite recipe of Seared Pork Tenderloin with you this month.

 

MICHAEL'S RECIPE: SEARED PORK TENDERLOIN

Yield: 4 servings

INGREDIENTS

1 lb.Pork Tenderloin
1/8 cupFresh basil, chopped
1/8 cupFresh rosemary leaves
1/8 cupCrushed red pepper
7 clovesGarlic, minced
to tasteSalt
1/2 cupOlive oil

PREPARATION

  1. Prepare and mix the basil, rosemary, salt and garlic together in a medium bowl and set aside.
  2. Coat the tenderloin in a couple of tablespoons of olive oil, then roll it in the seasonings making sure that the tenderloin is completely covered.
  3. Place a 14” Fry Pan on high heat over a burner, add the olive oil and heat it up until the oil barely begins to smoke.
  4. Place the tenderloin in the hot pan and sear it on all sides until the tenderloin is almost blackened.
  5. Once all the sides of the tenderloin are seared, place the whole pan with the tenderloin into a 350° F oven and cook for 20 minutes.
  6. At the end of 20 minutes the pork should be at a temperature of 145° F.
  7. Remove the tenderloin from the fry pan and place onto a cutting board.
  8. Let it rest for 10 to 15 minutes before slicing it.
  9. Slice into 1/4 inch medallions and present on a plate with a garnish of cilantro.
