MICHAEL'S RECIPE: ASADO

Yield: 8 servings

INGREDIENTS

2 lbs.Pork
1/2 teaspoonOregano
16 podsRegular chili peppers (dry)
2 clovesGarlic, chopped
2 tablespoonsFlour
to tasteSalt and pepper

PREPARATION

  1. Remove seeds from the chili peppers, wash and put into pan of hot water.
  2. Bring chili peppers to a boil and cook until soft.
  3. While peppers are cooking, cube pork.
  4. Using shortening, brown pork in skillet until well done.
  5. Add garlic to meat while cooking.
  6. Dry off excess fat.
  7. Drain chili and puree in blender.
  8. Strain chili sauce.
  9. When meat is done, add flour and mix in very well.
  10. Add chili sauce and oregano; simmer for 30-40 minutes.
