Food Service Director of the Month - Lyman Graham

Lyman Graham

Lyman has been a Food Service Director since 1991. He started in Dexter with 1200 students and one site. Then, he went to Carlsbad, New Mexico with 6000 students and 14 sites, all cooking kitchens. Then, on to Roswell, New Mexico, with 10,000 students and 20 sites and 7 cooking kitchens. He does lots of catering in all three districts and, of course, the summer feeding, as well.

He has a high school education and lots of work experience. He owned a restaurant before beginning to work with the schools.

Lyman has held the following positions in the School Nutrition Association (SNA)

  • Vice-President 2002
  • President-Elect 2003
  • President 2004
  • Treasurer 2009-continuing
  • Various committees

He has also worked with the National Public Policy and Legislative committee since 2006 - 2012 and Professional Standards Workforce - 2009.

Hobbies: Horseback riding, roping, cooking, sharing the work of God, and helping people.

Family Information: Married 38 years, has three daughters and 5 grandchildren.

 

LYMAN'S RECIPE: SOUR CREAM POUND CAKE

Yield: 16 servings

INGREDIENTS

6Eggs
2 cupsSugar
pinchSalt
1 cupSour cream
2 sticksButter
1 teaspoonVanilla
1 teaspoonAlmond
3 cupsFlour

PREPARATION

  1. Cream liquid ingredients and butter.
  2. Add flour.
  3. Place in bundt pan.
  4. Bake at 300 degrees for 1 hour 30 minutes.
