Kari Frederick has been the Director of Child Nutrition at Argyle ISD for the past four years. The district has three cafeterias and serves 1778 students. She has a Bachelor’s of Science degree in Scientific Nutrition from Texas A&M University and a MBA from Texas Women’s University.
Kari's favorite part of being a Child Nutrition Director is building relationships with the students and watching them grow over the years. “I tell my staff all of the time what important work they do, and I hope they all understand how important they are to our students” she says. Mrs. Frederick enjoys being a spectator at her son’s sporting events, reading, gardening, and spending time with her husband, friends, and dogs.
Kari's Recipe: Easy Chocolate Cupcakes
1 stick butter or margarine
1 square semi-sweet chocolate
1 cup sugar
3/4 cup flour
2 eggs
1 tsp vanilla
1 cup chopped pecans (optional)
Melt butter and semi sweet chocolate square over medium heat. Stir often so mixture does not scorch. Set aside.
Mix together sugar, flour, eggs, and vanilla.
Combine chocolate mixture and other ingredients. Add one cup chopped pecans if desired.
Bake in muffin tin lined with cupcake wrappers at 350 degrees for 25 minutes.
