Food Service Professional of the Month - Nancy Nordell

Nancy Nordell

NRS is delighted to recognize Nancy Nordell as our Food Service Professional for the month of September. Nancy is the Food and Nutrition Services Director of the El Paso Independent School District (EPISD) in El Paso, TX. She holds a Bachelor of Science Degree in Home Economics, majoring in Dietetics, from Texas Tech University. She completed her Dietetic training through New Mexico State University.

Nancy worked for nine years as a Clinical Dietitian at four local hospitals before becoming the Food Service Director at Vista Hills Hospital (now Del Sol). After four years as the Director, she went to work as a dietitian with El Paso ISD in 1990. Nancy became the Food and Nutrition Services Director for EPISD in 1998.

 

NANCY'S RECIPE: APPLE PANCAKE

Yield: One Puffy 10-Inch Pancake

INGREDIENTS

6 TbspMargarine
2 largeApples; peeled, cored and sliced (McIntosh works well)
3 TbspLemon juice
1/4 tspCinnamon
about 5 TbspConfectioners' sugar
3Eggs, room temperature
1/4 tspSalt
1/2 CAll-purpose flour
1/2 CSkim milk

PREPARATION

  1. Preheat the oven to 425°.
  2. Melt the margarine in a 10-inch skillet or shallow pan and take off heat. If the handle of the skillet is not ovenproof, wrap it with several layers of foil. Remove 2 tablespoons melted margarine and set aside in a small bowl.
  3. Put the apple slices in a large bowl with the lemon juice. Stir the cinnamon into the sugar and sprinkle the sugar mixture over the apple slices. Toss to mix. Put the skillet back on the burner and turn the heat to medium. Add the apples and cook, stirring often, for about 3 or 4 minutes, or until the apples are tender but still hold their shape.
  4. In a separate bowl (or blender, or food processor) combine the eggs, salt, flour, milk and the reserved 2 tablespoons melted margarine. Beat until smooth. Spread the apples evenly over the bottom of the skillet and pour the batter on top.
  5. Bake for about 20 minutes, or until golden and puffy. Turn immediately onto a warm platter so the apples are on top. Dust with a little confectioners’ sugar and serve at once.
